Roast Potates with Garlic and Oregano

1 1/2kg potatoes, peeled and cut into wedges
3 lemons, juiced
3 garlic cloves, peeled and cut into slivers
1 small orange, diced
200mls extra virgin olive oil
salt, pepper and dried oregano to taste


Place the potatoes in a roasting pan and season well. Let stand for 5 minutes.

Add the remaining ingredients, and enough water to cover the base of the pan. Roast for about 2 hours, until the potatoes become tender and quite golden.
