Broccoli rabe with garlic and chilli

Serves 6

1 bunch broccoli rabe
1/2 cup olive oil
2 large cloves garlic, crushed
1 fresh small red chilli, seeded and finely chopped

Discard tough outer leaves and stems from rabe, then pick tender leaves and shoots, including flowers, and wash thoroughly.  Cook rabe in boiling salted water for 5-6 minutes or until tender, then drain well.

Heat olive oil in a frying pan, add garlic and chilli and cook over medium heat for 30 seconds, then add rabe, season to taste with sea salt and freshly ground black pepper and stir over medium heat for 3-4 minutes or until warmed through.  Serve warm or at room temperature.
